Added to juice or wine break down pulp and aid in the extraction of tannin. Can also prevent pectin haze. Pectinase breaks down pectins, which constitute the fleshy part of many fruits such as grapes and apples.
Add 1/2 teaspoon per gallon to fruit wines and ciders.
