Wine Tannin (chestnut)

Tannin is an important component in wine and other beverages. In grapes, it is concentrated in the skins, seeds, and stems and is extracted into the wine when the grapes are crushed or when a wine is fermented in contact with the skins. Its dry bitterness balances the sweetness of the fruit, creating a more rounded flavour. Tannin can also improve clarity and aging by removing excessive proteins from the wine.
