Potassium Metabisulphite
Potassium metabisulfite has several uses in winemaking. The addition of sulfites can help control the growth of bacteria and wild yeasts present in the fruit. Sulfites are also anti-oxidants, so they will extend the shelf-life of the product.
To extend the shelf-life of a wine, add 1/4 teaspoon per 23 liters of product at stabilizing.
