Malic Acid

Used to balance the acidity in wine. A wine without sufficient acidity tastes flat. Malic acid is the primary acid found in grapes, apples, blackberries, blueberries, and many other fruits.

Add malic acid as prescribed in your recipe, or add at bottling to "flat-tasting" wines or ciders.
